When we went on picnics last week I wanted to bring some sauce to the chicken, we had coconut yoghurt at home so I used it to do beetroot tzatziki because I wanted something pink to have in my nice yellow picnic tiffin. Nice and beautiful a good comb with coconut yogurt and beetroot.
Barbecue chicken with beetroot tzatziki
My picnic tiffin
- 2.5 dl coconut yoghurt
- 1 beetroot
- 2 garlic cloves
- Zest from lemon peel (about 1 teaspoon)
- Salt and pepper
1. Grate the beetroot
2. Zest of about 1/2 lemon
3. Mix the coconut yoghurt with beetroot, squeeze the garlic and season with lemon peel, salt and pepper.
